Make a Movie Night - Bring a video camera and film anything from a reenactment of Maccabiah to a scene from your favorite movie.
Battle of the Bands - This requires planning in advnace: find some local bands and invite them to play at your synagouge.
Kareoke - Nothing like listening to your friends embarass themselves
Improv Night - Run improv/ comedy games with your chapter; you can even bring the chapter to a local improv/ comedy place.
